Familiar baker is back in business

DERRY — When it comes to cake, Eric Tedder has the right mix.

For Tedder, opening his Specialty Cakes and Pastry business is the recipe he hopes equals success as he celebrates a new business venture.

Tedder's bakery is located inside the Derry Quick Mart at 14 North Main St., a collaboration and partnership he is excited about.

The former Blackberry Bakery owner shares the space with Quick Mart proprietor George Meliek.

Tedder and other family members opened the Blackberry Bakery in downtown Derry in 2003. With the economy failing and business eventually taking a tumble, Tedder moved his bakery to Londonderry and eventually sold it.

Now he's back with a display case full of his popular cakes and pastries. He also specializes in wedding cakes, salads, pizza and subs.

"And our chocolate-dipped strawberries are going like crazy," he said.

Tedder said when he first came to the Quick Mart and saw its potential for bakery space, he knew he and Meliek could form a successful team.

"I told him this could turn into a bakery in a heartbeat," Tedder said.

Cases are filled with cakes and individual-sized treats like cream puffs, tarts and eclairs. Tables for indoor seating dot the room.

All baking is done on site, Tedder said. His mother, Mary Jo, helps out behind the counter and with decorating tasks.

Add in the convenience store atmosphere and it's a perfect mix.

"It's basically one-stop shopping right here," Tedder said.

He said the location is good, right near the Derry traffic circle and Pinkerton Academy.

He is working to get more visible signage out front and to get the word out that he is back in the bakery business.

Although summer is often a slow time in the baking world, Tedder said he hopes people will stop by, say hello and taste what he is offering.
